Ingredients
1 tablespoon olive oil
4 large eggs, lightly beaten
1/4 cup half and half
Kosher salt and freshly ground black pepper, to taste
8 mini croissants, halved horizontally
4 slices cheddar cheese, halved
Instructions

Heat olive oil in a large skillet over medium-high heat. Add the eggs and cook, whisking until they just begin to set.

Stir in half and half, season with salt and pepper, and continue cooking until eggs are fully cooked and creamy (about 3–5 minutes). Set aside.

Assemble each sandwich by layering scrambled egg, and a half slice of cheddar onto the bottom half of each croissant. Top with the other half.

Wrap each sandwich tightly in plastic wrap and freeze.

To reheat: unwrap, wrap in a paper towel, and microwave for 1–2 minutes or until heated through. For a crispier texture, finish reheating in an oven or air fryer.
