Description

Freezer Croissant Breakfast Sandwiches are the ultimate make-ahead breakfast solution! Buttery croissants are stuffed with fluffy scrambled eggs,  and melty cheddar cheese, then wrapped and frozen for a quick, satisfying meal anytime. These sandwiches are easy to prep in batches, freezer-friendly, and reheat perfectly in minutes. Ideal for busy mornings, school lunches, or weekend brunches, they’re customizable and kid-approved. Delicious, convenient, and stress-free!


Ingredients

1 tablespoon olive oil

4 large eggs, lightly beaten

1/4 cup half and half

Kosher salt and freshly ground black pepper, to taste

8 mini croissants, halved horizontally

4 slices cheddar cheese, halved


Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the eggs and cook, whisking until they just begin to set.

  2. Stir in half and half, season with salt and pepper, and continue cooking until eggs are fully cooked and creamy (about 3–5 minutes). Set aside.

  3. Assemble each sandwich by layering scrambled egg, and a half slice of cheddar onto the bottom half of each croissant. Top with the other half.

  4. Wrap each sandwich tightly in plastic wrap and freeze.

  5. To reheat: unwrap, wrap in a paper towel, and microwave for 1–2 minutes or until heated through. For a crispier texture, finish reheating in an oven or air fryer.

  6. Serve and enjoy!

Notes

Try other cheeses like Swiss, pepper jack, or provolone.

Prevent sogginess by letting sandwiches cool before freezing and reheating in an air fryer for best texture.
