Ingredients
For the soup:
6 tablespoons salted butter
4 medium yellow onions, thinly sliced
Black pepper, to taste
2 shallots, sliced
4 cloves garlic, chopped
2 tablespoons fresh thyme leaves
2 tablespoons chopped fresh sage
Red chili flakes, to taste
6–8 cups low-sodium chicken broth
1/2 cup tamari or low-sodium soy sauce
For the Gruyère toast:
4 slices of rustic bread (such as sourdough)
1 cup Gruyère cheese, shredded
Instructions
For the soup:

In a large pot or Dutch oven, melt the butter over medium heat. Add the sliced onions and shallots, and cook, stirring occasionally, for 25-30 minutes until they are deeply caramelized and soft. Add black pepper to taste.

Once the onions are caramelized, add the chopped garlic, thyme, sage, and red chili flakes (if using). Stir and cook for another 2-3 minutes until fragrant.

Pour in the chicken broth and tamari (or soy sauce), stirring to combine. Bring the soup to a simmer and let it cook for 30-40 minutes, allowing the flavors to meld together. Taste and adjust the seasoning with more pepper, chili flakes, or tamari if needed.

While the soup is simmering, prepare the Gruyère toast.
For the Gruyère toast:

Place the slices of bread on a baking sheet. Toast them under the broiler for 1-2 minutes until lightly golden.
