Description

Ingredients

For the Salad:

2 seedless watermelon slabs, cut 1 inch thick

8 oz mozzarella ball

1 lime

1 cup watercress

6 basil leaves

2 tablespoons pine nuts

Balsamic glaze (for drizzling)

Olive oil (for drizzling)

Flaky sea salt (for sprinkling)


Instructions

  1. Prepare the Watermelon: Cut the watermelon slabs into bite-sized cubes or wedges. Arrange the watermelon pieces on a large plate or serving dish.

  2. Add the Mozzarella: Tear the mozzarella ball into small pieces and scatter them over the watermelon.

  3. Assemble the Salad: Add the watercress leaves around the watermelon and mozzarella.

  4. Garnish: Tear the basil leaves and sprinkle them over the salad. Toast the pine nuts in a dry skillet over medium heat for 2-3 minutes, or until golden and fragrant. Sprinkle the toasted pine nuts over the salad.

  5. Finish the Salad: Drizzle with olive oil and balsamic glaze. Squeeze fresh lime juice over the top, and finish with a sprinkle of flaky sea salt.

  6. Serve: Serve immediately as a refreshing appetizer, side dish, or light meal.
