Ingredients

  • ¼ cup ghee or butter, divided
  • 1 tbsp olive oil
  • 1 lb Yukon gold potatoes, cut into ½-inch cubes
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • ½ tsp dried oregano
  • ½ tsp sea salt, plus more to taste
  • ¼ tsp ground black pepper, plus more to taste
  • lbs sirloin steak, cut into ½-inch cubes
  • Fresh parsley, chopped (for garnish)

Instructions

Cook the Potatoes:

  1. Heat a large cast-iron skillet over medium heat. Add olive oil and 2 tbsp ghee or butter.
  2. Once melted, add cubed potatoes. Sprinkle with garlic, thyme, oregano, salt, and pepper. Cook for 2-3 minutes undisturbed to form a crust.
  3. Stir potatoes and cook for an additional 6-8 minutes, stirring every minute, until golden brown and fork-tender. Remove from the skillet and set aside.

Sear the Steak Bites:

  1. Increase the heat to medium-high. Add the remaining 2 tbsp ghee or butter to the skillet.
  2. Once melted, add steak bites in a single layer. Season with a dash of salt and pepper. Cook undisturbed for 2 minutes to achieve a good sear.
  3. Stir and cook for another 1-2 minutes until browned and cooked to your preferred doneness.

Combine and Serve:

  1. Return the cooked potatoes to the skillet with the steak bites. Stir to combine and heat through for about 1 minute.
  2. Garnish with chopped fresh parsley and serve immediately.
