- 1 lb Yukon gold potatoes, cut into ½-inch cubes

- ½ tsp sea salt, plus more to taste
- ¼ tsp ground black pepper, plus more to taste
- 1¼ lbs sirloin steak, cut into ½-inch cubes
- Fresh parsley, chopped (for garnish)
Instructions
Cook the Potatoes:
- Heat a large cast-iron skillet over medium heat. Add olive oil and 2 tbsp ghee or butter.
- Once melted, add cubed potatoes. Sprinkle with garlic, thyme, oregano, salt, and pepper. Cook for 2-3 minutes undisturbed to form a crust.
- Stir potatoes and cook for an additional 6-8 minutes, stirring every minute, until golden brown and fork-tender. Remove from the skillet and set aside.
Sear the Steak Bites:
- Increase the heat to medium-high. Add the remaining 2 tbsp ghee or butter to the skillet.
- Once melted, add steak bites in a single layer. Season with a dash of salt and pepper. Cook undisturbed for 2 minutes to achieve a good sear.
- Stir and cook for another 1-2 minutes until browned and cooked to your preferred doneness.
Combine and Serve:
- Return the cooked potatoes to the skillet with the steak bites. Stir to combine and heat through for about 1 minute.
- Garnish with chopped fresh parsley and serve immediately.
