Description

Ingredients

1 1/2 cups vegetable stock

1 cup orzo pasta

2 tbsp olive oil (divided)

1 bunch asparagus, diced

4 oz goat cheese, crumbled

Salt and pepper to taste

1 tbsp lemon juice


Instructions

  1. Cook the Orzo: In a medium saucepan, combine vegetable stock, orzo, and 1 tablespoon of olive oil. Bring to a boil over medium-high heat.

  2. Add the Asparagus: Once boiling, add the diced asparagus. Cook uncovered for 8-10 minutes, stirring occasionally, until orzo is al dente and the liquid has absorbed.

  3. Finish the Dish: Remove from heat and stir in the remaining 1 tablespoon of olive oil, crumbled goat cheese, salt, pepper, and lemon juice. Mix until the cheese is melted and the sauce becomes creamy.

  4. Serve: Transfer the dish to a serving plate. Enjoy warm or at room temperature as a side dish or light main course.
