These Gooey Mozzarella Biscuit Bombs are the ultimate cheesy, garlicky snack! Made with soft biscuit dough and a melty mozzarella center, they bake to golden perfection and are perfect for game nights, appetizers, or a quick snack. Serve with marinara for dipping and watch them disappear in minutes!

Ingredients

For the Biscuit Bombs:

  • 1 (16 oz) can refrigerated biscuit dough (8 large biscuits)
  • 8 mozzarella cheese sticks (or block mozzarella cut into 1-inch cubes)

For the Garlic Butter:

  • 3 tablespoons unsalted butter, melted
  • 2 teaspoons garlic powder
  • 1 teaspoon Italian seasoning
  • ¼ cup grated Parmesan cheese
  • Optional: Chopped parsley for garnish

For Dipping:

  • Marinara or pizza sauce

Instructions

  1. Preheat the Oven:

    • Preheat oven to 375°F (190°C).
    • Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Biscuits:

    • Separate biscuits and flatten each into a 4–5 inch circle.
    • Place a mozzarella cheese stick or cube in the center.
  3. Assemble the Biscuit Bombs:

    • Fold the edges of the dough up and around the cheese, pinching the seams tightly to seal.
    • Roll gently in your hands to form a smooth ball.
  4. Arrange on the Baking Sheet:

    • Place seam-side down on the baking sheet, leaving space between each.
  5. Make the Garlic Butter:

    • In a small bowl, mix melted butter, garlic powder, and Italian seasoning.
    • Brush over each biscuit bomb.
  6. Bake:

    • Bake for 15–18 minutes, or until golden brown.
  7. Add Finishing Touches:

    • Brush with any remaining garlic butter.
    • Sprinkle with Parmesan cheese and chopped parsley (if using).
  8. Serve:

    • Serve warm with marinara or pizza sauce for dipping.

Notes

  • Spicy Kick: Add red pepper flakes or a dash of hot sauce to the garlic butter.
  • Cheese Variations: Try cheddar, gouda, or a cheese blend for a unique twist.
  • Everything Bagel Topping: Sprinkle with Everything Bagel seasoning for extra crunch.
