Description

Briam is a traditional Greek baked zucchini and potato dish, packed with Mediterranean flavors and roasted to perfection in olive oil and tomato sauce. This easy, healthy, and delicious meal can be served as a main dish or side.


Ingredients

  • 2 zucchini (sliced)
  • 3 medium potatoes (sliced)
  • 3 ripe tomatoes (sliced or pureed)
  • 1 red onion (sliced)
  • 3 cloves garlic (minced)
  • ⅓ cup olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried oregano
  • 2 tbsp fresh parsley (chopped)

Instructions

  • Preheat oven to 375°F (190°C).
  • Slice the zucchini, potatoes, tomatoes, and onion into thin rounds.
  • Arrange vegetables in a baking dish and sprinkle with garlic, oregano, salt, and pepper.
  • Drizzle generously with olive oil and toss to coat.
  • Cover with foil and bake for 45 minutes.
  • Remove foil and bake for another 30 minutes until golden and tender.
  • Garnish with fresh parsley and serve warm.

Notes

  • Add Eggplant: Traditional briam includes eggplant for added flavor.
  • Cheesy Twist: Sprinkle feta cheese on top before serving.
  • Spicy Version: Add red pepper flakes for heat.
