Description

Grilled peaches with mascarpone and honey offer a sweet and simple summer dessert. The smoky, caramelized peaches are perfectly paired with a creamy, honey mascarpone topping and fresh thyme. This quick and easy recipe is perfect for a barbecue, party, or casual snack and is sure to impress with its delightful flavors and textures.

Ingredients

4 ripe peaches

1 tablespoon olive oil or melted butter

1 tablespoon brown sugar

1/2 cup mascarpone cheese

2 tablespoons honey

1/2 teaspoon vanilla extract

Fresh thyme (optional, for garnish)

Instructions

  1. Wash and slice peaches in half lengthwise, removing the pits.

  2. Brush the cut side of the peaches with olive oil or melted butter, then sprinkle with brown sugar.

  3. Preheat your grill or grill pan to medium heat. Place the peaches on the grill, cut side down, and cook for 5-7 minutes, until softened and charred.

  4. In a bowl, combine mascarpone cheese, honey, and vanilla extract. Whisk until smooth.

  5. Remove the peaches from the grill and top with the mascarpone mixture. Garnish with fresh thyme and an extra drizzle of honey.

  6. Serve warm and enjoy!

Notes

Storage/Reheating: Leftover grilled peaches can be stored in an airtight container in the fridge for up to 3 days. To reheat, place them back on the grill or in the oven for a couple of minutes to restore the warmth and char.

Variations: Add a sprinkle of cinnamon or nutmeg for a warm, spiced flavor. For a savory twist, serve on a bed of mixed greens with crumbled feta or goat cheese.
