Description

These Healthy Coconut Raspberry Bars are a delicious, no-bake treat that combines the rich flavor of coconut with the tartness of fresh raspberries. Packed with healthy fats, fiber, and antioxidants, these vegan and gluten-free bars are the perfect guilt-free snack or dessert. Simple to make and naturally sweetened with maple syrup.


Ingredients

1 ½ cups Desiccated coconut

¼ cup Coconut oil, melted

¼ cup Maple syrup

Pinch of salt

1 cup Raspberries (fresh or thawed from frozen)

2 tablespoons Water or orange juice

1 teaspoon Orange zest

1 tablespoon Chia seeds


Instructions

  • In a bowl, combine the desiccated coconut, melted coconut oil, maple syrup, and salt. Mix until everything is well incorporated.

  • Press the mixture into the base of a lined baking pan, ensuring it’s evenly spread. Set aside.

  • In a small saucepan, cook the raspberries, water (or orange juice), and orange zest over medium heat for 5-7 minutes, mashing the berries as they cook.

  • Stir in the chia seeds and cook for an additional 2 minutes, allowing the mixture to thicken into a jam-like consistency.

  • Pour the raspberry sauce over the coconut base and spread it evenly.

  • Refrigerate the bars for at least 2 hours, or until firm.

  • Slice into bars and serve!

Notes

Swap raspberries for other berries like strawberries or blueberries for different flavors.

If you prefer, use honey or agave syrup instead of maple syrup.

For added richness, stir in almond or cashew butter into the coconut base.
