Description

Bounty Dates are a healthy, vegan treat that combines the rich flavors of coconut and chocolate in bite-sized form. These no-bake, easy-to-make bites are the perfect guilt-free dessert or snack, offering a sweet, chewy date filling coated in dark chocolate. With minimal prep time and just a few simple ingredients like dates, coconut, and dark chocolate, these indulgent bites are perfect for satisfying your sweet cravings without compromising on health. Ingredients

1 cup (90g) shredded/desiccated coconut

⅓ cup (80ml) coconut milk

15 Medjool dates (pitted)

180g dark chocolate


Instructions

  • Remove the pits from the dates and set them aside.

  • In a bowl, mix the shredded coconut with the coconut milk until well combined.

  • Open each date and stuff them with the coconut mixture, then close them tightly.

  • Chop the dark chocolate into small pieces and melt it in the microwave in 20-second intervals, stirring in between, until smooth.

  • Dip each stuffed date into the melted chocolate, shaking off any excess.

  • Place the chocolate-covered dates on a plate and refrigerate for at least 30 minutes, or until the chocolate firms up.

  • Once ready, serve and enjoy!

Notes

Sweetness Adjustment: If you’d like a sweeter treat, add a drizzle of maple syrup or agave nectar to the coconut mixture.
