Ingredients
1 cup (90g) shredded/desiccated coconut
⅓ cup (80ml) coconut milk
15 Medjool dates (pitted)
180g dark chocolate
Instructions

Remove the pits from the dates and set them aside.

In a bowl, mix the shredded coconut with the coconut milk until well combined.

Open each date and stuff them with the coconut mixture, then close them tightly.

Chop the dark chocolate into small pieces and melt it in the microwave in 20-second intervals, stirring in between, until smooth.

Dip each stuffed date into the melted chocolate, shaking off any excess.

Place the chocolate-covered dates on a plate and refrigerate for at least 30 minutes, or until the chocolate firms up.
