Ingredients
- 1 lb smoked sausage, sliced into rounds
- 4 medium russet potatoes, diced
- 1 small onion, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp smoked paprika
- ½ tsp garlic powder
- Salt and pepper, to taste
- 2 tbsp fresh parsley, chopped (for garnish)
- Optional: shredded cheddar cheese or hot sauce for serving
Instructions
- Cook the Potatoes:
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add diced potatoes, seasoning with salt, pepper, smoked paprika, and garlic powder.
- Cook for 10–12 minutes, stirring occasionally, until golden brown and tender.
- Remove potatoes from the skillet and set aside.
- Cook the Sausage and Vegetables:
- In the same skillet, heat the remaining 1 tablespoon of olive oil.
- Add the sliced smoked sausage and cook for 3–4 minutes, or until browned.
- Add chopped onion, red bell pepper, and minced garlic.
- Cook for 5–7 minutes until the vegetables are softened.
- Combine and Serve:
- Return the cooked potatoes to the skillet, stirring to combine.
- Cook for 2–3 minutes to heat through.
- Garnish with fresh parsley. Optionally, sprinkle with shredded cheddar cheese or drizzle with hot sauce.

- Yukon Gold or red potatoes can be substituted for russet potatoes.
