Description

Ingredients

  • 1 lb smoked sausage, sliced into rounds
  • 4 medium russet potatoes, diced
  • 1 small onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • Salt and pepper, to taste
  • 2 tbsp fresh parsley, chopped (for garnish)
  • Optional: shredded cheddar cheese or hot sauce for serving

Instructions

  • Cook the Potatoes:
    • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
    • Add diced potatoes, seasoning with salt, pepper, smoked paprika, and garlic powder.
    • Cook for 10–12 minutes, stirring occasionally, until golden brown and tender.
    • Remove potatoes from the skillet and set aside.
  • Cook the Sausage and Vegetables:
    • In the same skillet, heat the remaining 1 tablespoon of olive oil.
    • Add the sliced smoked sausage and cook for 3–4 minutes, or until browned.
    • Add chopped onion, red bell pepper, and minced garlic.
    • Cook for 5–7 minutes until the vegetables are softened.
  • Combine and Serve:
    • Return the cooked potatoes to the skillet, stirring to combine.
    • Cook for 2–3 minutes to heat through.
    • Garnish with fresh parsley. Optionally, sprinkle with shredded cheddar cheese or drizzle with hot sauce.

Notes

  • To prevent potatoes from sticking, ensure the skillet is well-heated and avoid overcrowding the pan.
  • Yukon Gold or red potatoes can be substituted for russet potatoes.
  • Use pre-cooked or leftover potatoes to save time.
