2–3 tablespoons ice water

Add Water: Gradually add the ice water, one tablespoon at a time, pulsing between additions, until the dough just comes together. You may need more or less water depending on your flour and humidity.

Roll Out the Dough: Turn the dough out onto a lightly floured surface and knead it a few times to bring it together. Roll the dough out into a thin sheet, about 1/8 inch thick.
