Ingredients
1 cup whole milk
1 cup honey
¼ cup unsalted butter, room temperature
2 whole eggs, beaten lightly
2½ cups spelt flour
1 teaspoon salt
1 tablespoon baking soda
Instructions

Preheat the oven to 325°F (163°C) and grease a loaf pan.

Heat the milk over low heat in a saucepan. Stir in honey until fully combined and remove from heat.

Add the softened butter and beaten eggs to the milk and honey mixture, mixing well.

Stir in the spelt flour, salt, and baking soda until just combined.

Pour the batter into the prepared loaf pan and bake for 40–45 minutes, until the top is golden and a skewer inserted comes out clean. If it browns too quickly, reduce the oven temperature to 300°F (150°C).
