Ingredients
- 2 cups (260g) all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt

- 1/4 cup (56g) unsalted butter, melted
- 1/4 cup vegetable oil
- 3/4 cup (168g) packed light brown sugar
- 2 large eggs
- 1 1/2 cups mashed bananas (about 3 large ripe bananas)
- 8 oz can crushed pineapple, with juice
- 1 tsp vanilla extract
- 1/2 cup (53g) chopped pecans, toasted
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a large bowl, mix the melted butter, vegetable oil, and brown sugar until smooth and combined.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the mashed bananas, crushed pineapple with juice, and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the toasted pecans.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Slice and serve!
