- 2 cups (500g) mascarpone cheese
- 24 Savoiardi biscuits (ladyfingers)
- 1 cup (230ml) strong brewed coffee
- 4 tablespoons coffee liqueur (optional)
- 1 tablespoon cocoa powder
Mascarpone Cream
- 4 egg yolks, at room temperature
- 3 egg whites, at room temperature
- 6 tablespoons sugar
Toppings
- 3 tablespoons dark chocolate, grated
Instructions
- Prepare the Egg Yolks and Sugar
- In a mixing bowl, whisk the egg yolks with 3 tablespoons of sugar until pale and thick.
- Add the mascarpone cheese and whisk until smooth and creamy. Set aside.
- Whip the Egg Whites
- In a separate clean bowl, whisk the egg whites until frothy.
- Gradually add the remaining 3 tablespoons of sugar and whisk until stiff, glossy peaks form.
- Combine Mascarpone and Egg Whites
- Gently fold one-third of the whipped egg whites into the mascarpone mixture to lighten it.
- Repeat this process in thirds until all the egg whites are incorporated, creating a light, airy mixture.
- Dip the Ladyfingers
- In a shallow dish, combine the brewed coffee and coffee liqueur (if using).
- Quickly dip each ladyfinger into the coffee mixture for 2-3 seconds per side—they should be moist but not soggy.
- Assemble the First Layer
- Arrange a layer of soaked ladyfingers in a glass or ceramic dish, trimming them as needed to fit.
- Spread half of the mascarpone mixture evenly over the ladyfingers.
- Sprinkle with half of the grated dark chocolate.
- Add the Second Layer
- Repeat the process with another layer of soaked ladyfingers and top with the remaining mascarpone mixture.
- Smooth the surface and dust generously with cocoa powder.
- Chill and Serve
- Cover the dish and refrigerate for at least 6-8 hours, preferably overnight, to allow the flavors to meld.
