Ingredients

Base Ingredients

  • 2 cups (500g) mascarpone cheese
  • 24 Savoiardi biscuits (ladyfingers)
  • 1 cup (230ml) strong brewed coffee
  • 4 tablespoons coffee liqueur (optional)
  • 1 tablespoon cocoa powder

Mascarpone Cream

  • 4 egg yolks, at room temperature
  • 3 egg whites, at room temperature
  • 6 tablespoons sugar

Toppings

  • 3 tablespoons dark chocolate, grated

Instructions

  • Prepare the Egg Yolks and Sugar
    • In a mixing bowl, whisk the egg yolks with 3 tablespoons of sugar until pale and thick.
    • Add the mascarpone cheese and whisk until smooth and creamy. Set aside.
  • Whip the Egg Whites
    • In a separate clean bowl, whisk the egg whites until frothy.
    • Gradually add the remaining 3 tablespoons of sugar and whisk until stiff, glossy peaks form.
  • Combine Mascarpone and Egg Whites
    • Gently fold one-third of the whipped egg whites into the mascarpone mixture to lighten it.
    • Repeat this process in thirds until all the egg whites are incorporated, creating a light, airy mixture.
  • Dip the Ladyfingers
    • In a shallow dish, combine the brewed coffee and coffee liqueur (if using).
    • Quickly dip each ladyfinger into the coffee mixture for 2-3 seconds per side—they should be moist but not soggy.
  • Assemble the First Layer
    • Arrange a layer of soaked ladyfingers in a glass or ceramic dish, trimming them as needed to fit.
    • Spread half of the mascarpone mixture evenly over the ladyfingers.
    • Sprinkle with half of the grated dark chocolate.
  • Add the Second Layer
    • Repeat the process with another layer of soaked ladyfingers and top with the remaining mascarpone mixture.
    • Smooth the surface and dust generously with cocoa powder.
  • Chill and Serve
    • Cover the dish and refrigerate for at least 6-8 hours, preferably overnight, to allow the flavors to meld.
    • Serve chilled and enjoy!
