Ingredients

2 boneless, skinless chicken breasts

1 tsp onion powder

1 tsp garlic powder

1 tsp dried oregano

Sea salt and freshly ground black pepper, to taste

1 tsp lemon zest (from a wax-free lemon)

1 tbsp sunflower, canola, or avocado oil

Butter (a few slices)

Lemon slices, for serving


Instructions

  • Pat the chicken breasts dry with paper towels.

  • In a small bowl, mix onion powder, garlic powder, dried oregano, sea salt, and black pepper.

  • Sprinkle the seasoning evenly on both sides of the chicken breasts.

  • Zest the lemon and sprinkle the zest over the seasoned chicken.

  • Heat the oil in a cast iron skillet over medium-high heat until shimmering.

  • Place the chicken breasts in the skillet and sear for 5–6 minutes on each side, or until the internal temperature reaches 165°F (74°C).

  • In the last minute of cooking, add butter slices to the skillet and let them melt, basting the chicken with the butter.

  • Remove the chicken from the skillet and let it rest for 5 minutes before slicing.

  • Serve with lemon slices for a fresh finishing touch.

Notes

Variations: Add fresh herbs like thyme or rosemary for added flavor, or a pinch of cayenne for a spicy kick. Try lime zest instead of lemon for a citrus twist.

Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
