Ingredients
2 cups cooked chicken
1 (14-ounce) can cream of chicken soup
1 (14-ounce) can cream of mushroom soup
1 (10-ounce) can diced tomatoes and chilies
1 tablespoon taco seasoning (homemade or store-bought)
12 (8-inch) corn tortillas
2 cups Mexican-Blend Shredded Cheese (Cheddar & Monterey Jack)
Instructions

Preheat your oven to 350°F (175°C).

In a large mixing bowl, combine cooked chicken, cream of chicken soup, cream of mushroom soup, diced tomatoes with chilies, and taco seasoning. Stir until everything is well combined.

Cut the corn tortillas into strips or quarters, depending on your preference.

In a greased 9×13-inch casserole dish, layer half of the tortilla pieces on the bottom of the dish.

Spread half of the chicken mixture evenly over the tortilla layer.

Sprinkle one cup of shredded Mexican cheese over the chicken mixture.
