Description

This Low Carb Cheeseburger Soup delivers all the rich, indulgent flavors  cheeseburger in a creamy, keto-friendly soup with just 4g net carbs per serving. Perfect for low-carb meal prep, it’s a quick one-pot recipe that’s hearty, high-protein, and family-approved.


Ingredients

2 tbsp unsalted butter

1 lb lean ground beef

4 oz full-fat cream cheese

2 tbsp tomato paste

1 tbsp French mustard

1 tsp garlic powder

½ tsp paprika

¼ tsp salt

¼ tsp black pepper

2 cups beef stock

¼ cup heavy cream

1 cup shredded cheddar cheese


Instructions

  • Add butter; once melted, add ground beef and cook until browned.
  • Stir in cream cheese, tomato paste, mustard, garlic powder, paprika, salt, and pepper. Cook until smooth.

  • Add beef stock and bring to a boil. Reduce heat and simmer for 10 minutes.

  • Stir in heavy cream and cheddar cheese until melted and creamy.

Notes

Use coconut milk and nutritional yeast for a paleo or dairy-free version.

Add low-carb vegetables like cauliflower or zucchini for more bulk.
