Description

This Mediterranean Baked Salmon recipe is quick, healthy, and packed with vibrant flavors. Infused with lemon, garlic, thyme, and paprika, this easy-to-make dish is perfect for any occasion. Paired with fresh spinach and a side of roasted vegetables, it’s a wholesome and delicious meal that comes together in just 20 minutes.

Ingredients

For the Salmon:

500 g salmon (½ side)

1 tablespoon freshly squeezed lemon juice

2 tablespoons good quality olive oil

1 clove garlic (minced)

1 tablespoon fresh thyme (chopped)

1 teaspoon salt

½ teaspoon freshly ground black pepper

½ teaspoon paprika

Instructions

1. Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.

2. Prepare the Marinade: In a small bowl, combine lemon juice, olive oil, minced garlic, fresh thyme, salt, black pepper, and paprika. Stir until well mixed.

3. Season the Salmon: Place the salmon fillet skin-side down on the prepared baking sheet. Pour the marinade evenly over the top, ensuring it’s well-coated. Use a brush or spoon to spread the marinade if necessary.

4. Bake the Salmon: Place the salmon in the oven and bake for 12-15 minutes, depending on the thickness of the fillet. The salmon should be opaque and flake easily with a fork. If you prefer a crispier top, broil for 1-2 minutes at the end.

5. Serve: Remove the salmon from the oven and let it rest for a couple of minutes before serving. Garnish with fresh thyme or a wedge of lemon, if desired.

Notes

  • Spicy Version: Add a pinch of red pepper flakes to the marinade for an extra kick.

  • Herb Variations: Replace thyme with rosemary, oregano, or dill for a different flavor profile.

  • Grilling Option: You can also grill the salmon over medium heat for 4-5 minutes per side for a slightly smoky flavor.
