Description

Ingredients

4 sweet corn on the cob

1/4 cup sour cream

1/4 cup mayonnaise

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon chili powder (optional, for added spice)

2 tablespoons fresh cilantro, chopped

Zest and juice of 1 lime

Salt and pepper to taste

1/2 cup cotija cheese (or feta cheese as a substitute)


Instructions

  • Make the Sauce: In a medium mixing bowl, combine sour cream, mayonnaise, garlic powder, paprika, chili powder (if using), cilantro, lime juice, lime zest, salt, and pepper. Mix well until smooth.

  • Grill the Corn: Preheat your grill to 400°F (200°C). Place the corn on the grill and cook for 6-8 minutes, turning occasionally, until the corn is charred and tender.

  • Assemble the Elote: Brush the corn evenly with the prepared sauce, then sprinkle with crumbled cotija cheese. Optionally, drizzle with extra lime juice for added flavor.

Notes
