Ingredients

4 cups mushrooms, sliced

1 onion, diced

4 cups vegetable broth

1 tsp garlic powder

1 tsp thyme

Salt and pepper, to taste

1 cup heavy cream


Instructions

  1. Place sliced mushrooms, diced onion, vegetable broth, garlic powder, thyme, salt, and pepper in the Crockpot.

  2. Stir to combine the ingredients.

  3. Cover and cook on low for 6-7 hours or high for 3-4 hours, until mushrooms are tender and flavors have melded.

  4. Use an immersion blender to partially blend the soup for texture, or blend until smooth if preferred.

  5. Stir in the heavy cream and cook on high for an additional 10-15 minutes.

  6. Taste and adjust seasoning before serving.

Notes
