Ingredients

24 wonton wrappers (vegan if needed)

1 tsp sesame oil

4 oz shiitake mushrooms (or any mix of mushrooms)

8 oz extra-firm tofu, pressed

2 garlic cloves, minced

4 cups mushroom broth

1 tbsp soy sauce

Fresh herbs (optional for garnish)


Instructions

  • Make the Wontons: Sauté garlic and mushrooms in sesame oil until softened. Crumble tofu and mix with the mushroom mixture. Fill wonton wrappers with the mixture and seal.

  • Prepare the Broth: In a pot, heat mushroom broth and soy sauce.

  • Cook the Wontons: Drop wontons into boiling broth and cook for about 5-7 minutes until they float.

  • Serve: Garnish with fresh herbs if desired and enjoy.

Notes

Storage: Store leftovers in an airtight container for up to 2 days. Reheat the soup on the stovetop, adding a bit of water if the broth thickens.
