This No Sugar Added Energy Dessert is a naturally sweet, creamy, and nutrient-packed treat made with dried fruits, nuts, cottage cheese, and yoghurt. Perfect for a healthy snack or guilt-free dessert, it’s easy to prepare, customizable, and full of wholesome goodness.
Ingredients
40 g dried cranberries
100 g dried apricots
130 g plums
100 ml water
20 g instant gelatine
150 g walnuts
50 g pine nuts
50 g almonds
50 g cashew nuts
350 g cottage cheese
150 g natural yoghurt
Instructions

Soak cranberries, apricots, and plums in cold water for 15–20 minutes; pat dry.

Mix gelatine with water and allow to swell for 5–10 minutes.

Blend walnuts, pine nuts, almonds, cashew nuts, cottage cheese, and yoghurt until smooth.

Gently melt the swollen gelatine; temper with a small amount of nut mixture.

Mix tempered gelatine into the remaining nut mixture until fully incorporated.

Pour into a prepared mold, cover, and refrigerate for 2 hours until set.
Notes
Swap dried fruits like dates, figs, or raisins for variety.
Substitute different nuts such as pecans or macadamias.
Add spices like cinnamon or nutmeg for extra flavor.
Use ricotta instead of cottage cheese for a creamier texture.
