Ingredients
1 stick butter (½ cup)
1 cup milk
¾ cup all-purpose flour
4 eggs
½–1 tablespoon sugar (optional)
Sugar for sprinkling
Instructions
Preheat your oven to 375°F (190°C) and grease or line a muffin tin with paper liners.
In a medium saucepan, melt the butter over medium heat. Once melted, add the milk and heat until it begins to simmer (but not boiling). Remove from heat.
Stir in the flour, mixing until a smooth dough forms. Cook for 1-2 minutes over low heat, stirring constantly to avoid sticking.
Allow the mixture to cool slightly before adding the eggs, one at a time. Stir each egg in fully before adding the next. The dough should be smooth and glossy.
If desired, add ½–1 tablespoon of sugar for a slightly sweeter puff and mix until combined.
Spoon the batter into the muffin tin, filling each cup about two-thirds full.
Bake for 25-30 minutes, or until golden brown and puffed up. Do not open the oven door for the first 20 minutes to ensure they rise properly.
Sprinkle sugar on top of each puff while still warm for extra sweetness.
Allow the puffs to cool slightly before serving. Best enjoyed warm!
