Description

One Pot Pizza Pasta combines the delicious flavors of pizza with pasta, featuring savory sausage, bell peppers, mushrooms, mozzarella, and zesty seasonings. This easy, one-pot dish is a comforting, cheesy dinner that’s perfect for busy weeknights with minimal cleanup.


Ingredients

Chicken Fajita Bowl Ingredients:

½ lb. sweet or spicy Italian sausage (casings removed)

½ medium onion, diced

1 bell pepper, diced

8 oz mushrooms (any kind), sliced

4 oz tomato paste (about ⅓ cup)

½ teaspoon red pepper flakes (optional)

1 ½ teaspoons oregano

2 garlic cloves, minced

½ lb. short pasta, like rotini

2 ½ cups chicken broth

1 ½ cups mozzarella cheese, shredded

Parmesan cheese for garnish (optional)


Instructions

  1.  In a large pot or Dutch oven, heat a splash of olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon as it cooks. Cook for 5-7 minutes, or until the sausage is browned and cooked through.

  2. Sauté the vegetables: Add the diced onion, bell pepper, and sliced mushrooms to the pot with the sausage. Cook for another 3-4 minutes, until the vegetables soften.

  3. Add garlic and seasonings: Stir in the minced garlic, red pepper flakes (if using), and oregano. Cook for 1 minute until fragrant.

  4. Add pasta and broth: Stir in the tomato paste, followed by the uncooked pasta and chicken broth. Bring the mixture to a simmer. Once simmering, reduce the heat to medium-low, cover the pot, and cook for 10-12 minutes, or until the pasta is tender and most of the liquid has been absorbed.

  5. Add cheese: Once the pasta is cooked, stir in the shredded mozzarella cheese. Cook for an additional 2-3 minutes, until the cheese is melted and everything is well combined.

  6. Serve and garnish: Serve the pizza pasta in bowls, and top with grated Parmesan cheese if desired. Enjoy!
