This easy Parmesan Crusted Chicken Sheet Pan Dinner is a simple, one-pan meal featuring crispy roasted potatoes, garlicky green beans, and juicy Parmesan-crusted chicken. Ingredients
3–4 chicken breasts (preferably even in size)
1 lb red potatoes (or baby potatoes)
1 lb fresh green beans
2 tablespoons extra-virgin olive oil
3 cloves garlic, minced
1 cup grated Parmesan cheese
1/2 cup breadcrumbs (Italian breadcrumbs preferred, or gluten-free breadcrumbs for a gluten-free option)
Salt and pepper, to taste
Instructions

Preheat oven to 400°F (200°C). Optionally, line a sheet pan with parchment paper or aluminum foil for easy cleanup.

Toss potatoes with 1 tablespoon olive oil, 1/4 cup Parmesan, 1 clove garlic, salt, and pepper. Spread evenly on the sheet pan and bake for about 15 minutes.

For the chicken, mix chicken breasts, 1 tablespoon olive oil, 1/4 cup Parmesan, breadcrumbs, 2 cloves garlic, salt, and pepper in a bowl. Coat the chicken evenly.

After 15 minutes, move potatoes to one-third of the pan. Place the chicken breasts in the next section.

Toss green beans with 1 tablespoon olive oil, salt, and pepper. Add to the remaining space on the pan.

Bake for 25 minutes, until chicken reaches an internal temperature of 165°F (74°C). For extra crispy potatoes, broil for 3-4 minutes.

Let the chicken rest for 5 minutes before serving.

Swap green beans with other veggies like broccoli, zucchini, or bell peppers.
Use panko breadcrumbs for added crunch or gluten-free breadcrumbs for a gluten-free option.
