Ingredients

  • 2 pounds red potatoes, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • ½ cup grated Parmesan cheese
  • 3 garlic cloves, minced
  • ½ teaspoon oregano
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • Chopped parsley, for garnish

Instructions

  • Preheat the Oven: Set the oven to 400°F (200°C) and line a baking sheet with parchment paper or grease it lightly.
  • Prepare the Potatoes: Wash and cut the potatoes into 1-inch chunks.
  • Season the Potatoes: Toss the potatoes in a large bowl with olive oil, garlic, oregano, salt, and pepper until well coated.
