Description

This Pecan Honey Roasted Sweet Potatoes recipe is a delightful blend of caramelized sweetness, crunchy pecans, and warm spices. Perfect as a holiday side dish or a nutritious everyday meal, these roasted sweet potatoes are easy to prepare and packed with flavor. The natural sweetness of honey enhances the earthy richness of sweet potatoes, while pecans add a satisfying crunch. Whether for Thanksgiving, Christmas, or a cozy weeknight dinner, this dish is a must-try!

Ingredients

  • 4 medium sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1/4 cup honey
  • 1/2 cup pecans, chopped
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat Oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Season Sweet Potatoes: In a large mixing bowl, toss the sweet potatoes with olive oil, honey, cinnamon, nutmeg, salt, and pepper until evenly coated.
  3. Roast Initial Stage: Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet. Roast for 20 minutes.
  4. Add Pecans & Continue Roasting: Remove from the oven, stir the potatoes, sprinkle chopped pecans over the top, and return to the oven. Roast for 10-15 more minutes until caramelized and fork-tender.
  5. Cool & Serve: Remove from the oven, let cool slightly, and garnish with fresh parsley if desired. Serve warm and enjoy!

Notes

  • Maple Version: Swap honey for maple syrup for a deeper flavor.
  • Spiced Up: Add a pinch of cayenne or chili powder for a sweet-heat combo.
  • Nut-Free: Omit pecans or replace them with toasted sunflower seeds.
  • Herbal Twist: Add fresh rosemary or thyme for a savory depth.
