Ingredients

3 cups fresh pineapple, diced

1 cup jalapeño peppers, thinly sliced

1 cup apple cider vinegar

2 cups granulated sugar

1 tablespoon grated ginger

2 cloves garlic, finely chopped


Instructions

  1. In a large saucepan, combine vinegar, sugar, lemon juice, mustard seeds, turmeric, grated ginger, and garlic. Bring to a boil, then reduce heat and simmer until the sugar dissolves.

  2. Add diced pineapple and jalapeño slices. Simmer over medium heat until pineapple is tender and syrup thickens (about 20 minutes).

  3. Sterilize jars and lids by boiling for at least 5 minutes.

  4. Ladle the hot mixture into sterilized jars, leaving 1/4 inch headspace. Wipe rims, secure lids, and process in a boiling water bath for 10 minutes.
