Description

Ingredients

2 cups flour

1 teaspoon baking soda

1 teaspoon salt

3 oz. cream cheese, softened

1 cup sugar

3 teaspoons vanilla extract

1 large egg, beaten

1/2 cup sour cream

1 (20 oz) can crushed pineapple, drained (save 23 Tbsp of the juice for the glaze)

For the Glaze:

1 1/2 cups powdered sugar

23 tablespoons reserved pineapple juice


Instructions

  1. Prepare the Oven and Pan: Preheat your oven to 350°F (175°C) and grease a bread pan.

  2. Mix Dry Ingredients: In a medium bowl, combine the flour, baking soda, and salt. Set aside.

  3. Mix Wet Ingredients: In a separate bowl, beat together the egg, sugar, cream cheese, and vanilla extract until smooth and well combined.

  4. Combine Wet and Dry Ingredients: Gradually add the dry ingredients into the wet ingredients, stirring until just combined. Be careful not to overmix.

  5. Add Sour Cream and Pineapple: Stir in the sour cream until combined, then fold in the drained crushed pineapple.

  6. Bake the Bread: Pour the batter into the prepared pan and spread it evenly. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.

  7. Cool the Bread: Let the bread cool in the pan for 15-20 minutes before transferring it to a wire rack to cool completely.

  8. Make the Glaze: While the bread is cooling, mix together the powdered sugar and reserved pineapple juice in a small bowl until smooth and the desired consistency is reached.

  9. Drizzle the Glaze: Once the bread has cooled, drizzle the glaze over the top, allowing it to soak into the bread slightly.
