Description

Pistachio & Raspberry Cheesecake Domes are no-bake, individual-sized desserts featuring a creamy pistachio cheesecake filling with a raspberry swirl, layered over a buttery graham cracker crust. These elegant dome-shaped treats are easy to prepare ahead and make a perfect centerpiece for special occasions or dinner parties.


Ingredients

Pistachios, finely ground

Cream cheese

Heavy cream

Sugar

Fresh raspberries (whole or for puree)

Graham cracker crumbs

Unsalted butter, melted

Gelatin


Instructions

  • Prepare Crust: Combine graham cracker crumbs and melted butter. Press into the bottom of silicone dome molds. Chill to set.

  • Make Filling: Blend pistachios into crumbs. Beat cream cheese with sugar, then add heavy cream and pistachio crumbs.

  • Add Gelatin: Dissolve gelatin in water and mix into the cheesecake filling.

  • Assemble: Fill molds with cheesecake mixture, swirl in raspberry puree, and smooth tops.

  • Chill: Refrigerate for at least 4 hours, or overnight, to set.

  • Unmold & Serve: Carefully remove from molds. Garnish with raspberries or additional berry sauce.

Notes

For a vegan version, substitute with plant-based cream cheese, coconut cream, and agar-agar.

You can swap pistachios for almonds or hazelnuts.

Use silicone dome molds for easy unmolding.

Add lemon zest or vanilla extract for extra flavor depth.
