Ingredients

For the Base:

1 tablespoon pomegranate juice

For the Chia Layer:

1 cup unsweetened almond milk

1/4 cup chia seeds

1 tablespoon honey or maple syrup

1/2 teaspoon vanilla extract

For the Topping:

1/2 cup pomegranate seeds

Instructions

  1. Mash raspberries with pomegranate juice and honey (or maple syrup) until slightly juicy.

  2. Spoon raspberry mixture into serving glasses.

  3. In a bowl, mix almond milk, chia seeds, honey (or maple syrup), and vanilla extract; let sit for 15 minutes to thicken.

  4. Pour chia mixture over the raspberry base in glasses.

  5. Refrigerate for at least 2 hours until set.

  6. Top with pomegranate seeds, raspberries, and mint leaves before serving.
