Ingredients

  • 2 large potatoes
  • 3 tablespoons butter
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 23 tablespoons milk

Instructions

  • Peel and chop the potatoes, then boil in salted water for about 10-15 minutes until tender.
  • Drain and mash the potatoes until smooth.
  • In a mixing bowl, combine the mashed potatoes with butter, flour, baking powder, salt, and pepper. Stir until the dough forms.
  • Gradually add milk, one tablespoon at a time, until the dough is soft but not sticky.
  • Turn the dough onto a floured surface and roll it out to about 1/2-inch thick.
  • Cut the dough into 8 wedges, like a pizza.
  • Heat a griddle or frying pan over medium heat. Cook each scone for about 3-4 minutes per side, until golden brown.
  • Serve warm with butter, jam, or your favorite toppings.
