Description

This Pumpkin Bread Pudding is a cozy, budget-friendly dessert that celebrates the flavors of fall. Made with brioche bread, warm spices, and rich pumpkin custard, this easy-to-make treat is perfect for holiday gatherings or a comforting family dessert.

Ingredients

  • 16 oz brioche bread, cubed
  • 1½ cups milk
  • 1½ cups heavy cream
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 5 large eggs
  • 2 teaspoons vanilla extract
  • ½ teaspoon ground cloves
  • 2½ teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 (15 oz) can pumpkin puree

Instructions

  • Preheat Oven: Set oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • Cube the Bread: Cut brioche into 1- to 2-inch cubes and place in a large mixing bowl.
  • Make the Custard: In a separate bowl, whisk together milk, heavy cream, sugars, eggs, vanilla extract, cloves, cinnamon, nutmeg, and pumpkin puree until smooth.
  • Soak the Bread: Pour the custard over the bread cubes, gently stirring to coat. Let sit for 20 minutes to absorb.
  • Transfer & Bake: Pour the soaked bread mixture into the greased baking dish. Bake for 50-60 minutes, or until set in the center and golden brown on top.
  • Serve: Allow to cool slightly before serving. Enjoy warm with vanilla ice cream, whipped cream, or caramel sauce.

Notes

  • Bread Options: Use challah or French bread instead of brioche for a different texture.
  • Add-Ins: Mix in raisins, cranberries, or chopped nuts for extra flavor.
  • Spice Mix: Swap individual spices with 2½ teaspoons of pumpkin pie spice.
  • Dairy-Free Version: Substitute milk and heavy cream with almond milk and coconut cream.
