1/4 tsp ginger
1/4 tsp nutmeg
1 1/4 cups pure pumpkin
1 cup granulated sugar
1/2 cup milk
2 large eggs
6 tbsp melted coconut oil
Instructions
-
Prepare Streusel: In a bowl, combine the granulated sugar, light brown sugar, cinnamon, cloves, ginger, nutmeg, all-purpose flour, and chopped pecans. Stir in the melted butter until the mixture becomes crumbly. Chill until ready to use.
-
Prepare Bread: In a large bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, cloves, ginger, and nutmeg.
-
Mix Wet Ingredients: In a separate bowl, mix the wet ingredients: pure pumpkin, granulated sugar, milk, eggs, and melted coconut oil.
-
Combine: Add the wet ingredients to the dry ingredients and fold until just combined. Be careful not to overmix.
-
Assemble: Pour half of the batter into a greased pan, sprinkle with 3 tablespoons of the streusel, then top with the remaining batter. Sprinkle the rest of the streusel on top.
-
Bake: Bake at 350°F for 60 minutes, or until a toothpick inserted into the center comes out clean. Cool for 15 minutes before removing from the pan.
Notes
Add Chocolate Chips: Add a handful of chocolate chips to the batter for an extra indulgent treat.
Swap Walnuts for Pecans: If you prefer, swap the pecans in the streusel for walnuts for a different flavor.
Extra Spice Options: Feel free to add a pinch of allspice or cardamom for a more complex spice profile.
