Ingredients
2 cups cooked rice (preferably leftover)
1 lb chicken breasts, diced
1/2 cup peas and carrots (frozen or fresh)
3 tablespoons soy sauce (low-sodium recommended)
2 eggs, beaten
2 tablespoons sesame oil
2 tablespoons olive oil
Salt and pepper, to taste
Instructions

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add diced chicken, season with salt and pepper, and cook until browned and fully cooked through. Remove chicken and set aside.

In the same skillet, add sesame oil and peas and carrots. Stir-fry until tender, about 2-3 minutes.

Push the vegetables to one side of the skillet. Pour the beaten eggs into the other side and scramble until cooked through, then combine everything together.

Add the cooked rice, chicken, and soy sauce to the skillet. Stir well to combine, making sure everything is heated through and evenly seasoned.

Notes
You can substitute chicken with beef, shrimp, or tofu for different variations.
For a low-carb version, use cauliflower rice instead of regular rice.
