Description

This restaurant-style chicken fried rice is a quick and flavorful dish that brings the delicious taste of hibachi grills right to your home. Ingredients

2 cups cooked rice (preferably leftover)

1 lb chicken breasts, diced

1/2 cup peas and carrots (frozen or fresh)

3 tablespoons soy sauce (low-sodium recommended)

2 eggs, beaten

2 tablespoons sesame oil

2 tablespoons olive oil

Salt and pepper, to taste


Instructions

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add diced chicken, season with salt and pepper, and cook until browned and fully cooked through. Remove chicken and set aside.

  • In the same skillet, add sesame oil and peas and carrots. Stir-fry until tender, about 2-3 minutes.

  • Push the vegetables to one side of the skillet. Pour the beaten eggs into the other side and scramble until cooked through, then combine everything together.

  • Add the cooked rice, chicken, and soy sauce to the skillet. Stir well to combine, making sure everything is heated through and evenly seasoned.

  • Serve hot and enjoy!

Notes

You can substitute chicken with beef, shrimp, or tofu for different variations.

For a low-carb version, use cauliflower rice instead of regular rice.

If you like crispy rice, let the rice sit undisturbed in the skillet for a couple of minutes before stirring.
