Ingredients

1 lb Italian sausage

1 package (9 oz) refrigerated cheese tortellini

1 can (14.5 oz) diced tomatoes

1 cup chicken broth

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

Fresh basil and Parmesan, for garnish


Instructions

  1. Brown the Italian sausage in a skillet over medium heat, then drain excess fat.

  2. Add the cooked sausage to the Crockpot.

  3. Add diced tomatoes, chicken broth, heavy cream, Parmesan cheese, and Italian seasoning to the Crockpot. Stir to combine.

  4. Cover and cook on low for 6-7 hours or high for 3-4 hours until the flavors have melded together.

  5. About 30 minutes before serving, add the refrigerated cheese tortellini and stir to combine. Cook on high for 20-30 minutes, until the tortellini is tender.

  6. Serve hot, garnished with fresh basil and grated Parmesan cheese.

For a vegetarian option, skip the sausage and add plant-based sausage or extra vegetables like spinach or mushrooms.
