For the Sheet Pan:
17 oz (500 grams) gnocchi
½ lb (250 grams) mushrooms, quartered
4 cloves garlic, minced
3 tablespoons olive oil
Juice of 1 lemon
1 teaspoon thyme
1 teaspoon salt
½ teaspoon black pepper
1 cup grated Parmesan cheese
2 cups baby spinach
Toasted pine nuts (optional)
Instructions
1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.
2. Prepare the Gnocchi and Mushrooms: Place gnocchi and quartered mushrooms on the prepared sheet pan, ensuring the mushrooms are cut small enough to cook evenly with the gnocchi.
3. Make the Garlic and Herb Dressing: In a small bowl, combine minced garlic, olive oil, lemon juice, thyme, salt, and black pepper. Whisk until well combined.
4. Toss and Roast: Drizzle the garlic mixture over the gnocchi and mushrooms. Toss everything together and spread in a single layer on the sheet pan. Roast in the preheated oven for 20-25 minutes, until the gnocchi is golden and crispy on the edges, and the mushrooms are tender.
5. Add Spinach and Cheese: Remove the pan from the oven and add spinach to the sheet pan. Toss gently to wilt the spinach with the heat from the gnocchi. Sprinkle the grated Parmesan cheese over the top and return to the oven for another 2-3 minutes until the cheese melts.
