Ingredients

1 lb ground beef

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon pepper

1 teaspoon paprika

1/2 teaspoon cayenne (optional)

8 cups tortilla chips

1 can black beans (drained and rinsed)

1/2 cup corn kernels

1/4 cup black olives, sliced

2 cups cheese (white cheddar, yellow cheddar, or Tex Mex blend)

Toppings: Diced tomatoes, sliced jalapeños, green onions, sour cream

Optional extra toppings: Guacamole, avocado, red onions, cilantro, ranch or spicy ranch sauce


Instructions

  • Cook the ground beef: Heat olive oil in a skillet over medium-high heat. Add the ground beef and garlic, cooking for 5-7 minutes until browned. Season with salt, pepper, paprika, and cayenne (optional). Set aside.

  • Prepare the nachos: Spread a layer of tortilla chips on a sheet pan. Evenly distribute the cooked ground beef, black beans, corn, black olives, and cheese on top.

  • Bake: Preheat the oven to 400°F (200°C). Bake the nachos for 12-15 minutes, or until the cheese is melted and bubbly.
