Ingredients
For the Quick Pizza Dough (1.2 pounds):
2 ¼ cups all-purpose flour, plus more for kneading
1 tablespoon sugar
1 tablespoon instant yeast
1 teaspoon salt
2 tablespoons olive oil
1 cup warm water (110-115°F)
For the Sheet Pan Pizza:
1 – 1.2 pounds pizza dough (store-bought or homemade)
1 tablespoon olive oil
⅔ cup pizza sauce
2 cups mozzarella cheese
4 oz pepperoni
Parmesan cheese for topping (optional)
Instructions
For the Quick Pizza Dough:

In a large bowl, combine the flour, sugar, yeast, and salt.

Add the olive oil and warm water (110-115°F) to the dry ingredients and mix until the dough starts to come together.

Turn the dough onto a floured surface and knead for 5-7 minutes until smooth and elastic.

Place the dough in a lightly oiled bowl, cover with a damp towel, and let it rise for 1 hour until doubled in size.

Punch down the dough, turn it onto a floured surface, and roll it into a rectangle to fit your sheet pan.
For the Sheet Pan Pizza:

Preheat your oven to 475°F (245°C).

Roll the dough out to fit your sheet pan. If using store-bought dough, roll it to size.

Drizzle the sheet pan with 1 tablespoon olive oil, place the dough on top, and stretch it gently to fit.

Spread pizza sauce evenly over the dough, leaving a small border around the edges.

Sprinkle mozzarella cheese over the sauce, then add pepperoni on top.
