Description

This healthy Shepherd’s Pie features a savory ground beef filling topped with creamy mashed cauliflower. Perfect for a low-carb twist on a classic dish, it’s packed with vegetables and flavor. Ingredients

1 pound ground beef

1 onion, diced

2 carrots, diced

1 cup green beans, chopped

1 tablespoon tomato paste

1 teaspoon dried thyme

3 cups mashed cauliflower


Instructions

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat if necessary.

  2. Add the diced onion, carrots, and green beans to the skillet and cook for about 5 minutes until the vegetables begin to soften.

  3. Stir in the tomato paste and dried thyme, cooking for another 2-3 minutes.

  4. Spread the beef and vegetable mixture into the bottom of a baking dish.

  5. Top the mixture with the mashed cauliflower, spreading it evenly over the filling.

  6. Bake the Shepherd’s Pie at 375°F (190°C) for 20-25 minutes or until the top is golden brown and the filling is bubbling.

Notes

Vegetarian Version: Swap the ground beef for lentils or mushrooms.

Add Cheese: For a richer topping, sprinkle shredded cheese over the mashed cauliflower before baking.

Spicy Kick: Add red pepper flakes or hot sauce to the beef mixture for some heat.
