Ingredients
For the Shrimp Fajitas:
- 1 pound large shrimp, deveined and peeled
- 2 tablespoons olive oil, divided
- 1 large red onion, sliced
- 3–4 bell peppers, different colors, sliced
- Fresh cilantro, chopped
- 1 lime, cut into wedges
- Tortillas for serving
For the Fajita Seasoning:
- 1 tablespoon smoked paprika
- 1 teaspoon cayenne pepper
- 1 tablespoon cumin powder
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1/2 teaspoon sea salt
Instructions
- Make the Seasoning: In a small bowl, whisk together smoked paprika, cayenne pepper, cumin, oregano, garlic powder, and salt.
- Season the Shrimp: Place shrimp in a shallow dish and sprinkle with half of the seasoning. Toss to coat.
- Cook the Veggies: Heat 1 tablespoon olive oil in a large cast-iron skillet over medium-high heat. Add the sliced onions and bell peppers. Cook for 4-5 minutes until tender.
- Cook the Shrimp: Heat the remaining oil in the same skillet. Add the shrimp and cook for 3-4 minutes, until pink and cooked through.
- Combine & Serve: Add the cooked veggies back to the skillet and toss with the shrimp. Garnish with chopped cilantro and serve with lime wedges and warm tortillas.
