Ingredients

For the Shrimp Fajitas:

  • 1 pound large shrimp, deveined and peeled
  • 2 tablespoons olive oil, divided
  • 1 large red onion, sliced
  • 34 bell peppers, different colors, sliced
  • Fresh cilantro, chopped
  • 1 lime, cut into wedges
  • Tortillas for serving

For the Fajita Seasoning:

  • 1 tablespoon smoked paprika
  • 1 teaspoon cayenne pepper
  • 1 tablespoon cumin powder
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon sea salt

Instructions

  • Make the Seasoning: In a small bowl, whisk together smoked paprika, cayenne pepper, cumin, oregano, garlic powder, and salt.
  • Season the Shrimp: Place shrimp in a shallow dish and sprinkle with half of the seasoning. Toss to coat.
  • Cook the Veggies: Heat 1 tablespoon olive oil in a large cast-iron skillet over medium-high heat. Add the sliced onions and bell peppers. Cook for 4-5 minutes until tender.
  • Cook the Shrimp: Heat the remaining oil in the same skillet. Add the shrimp and cook for 3-4 minutes, until pink and cooked through.
  • Combine & Serve: Add the cooked veggies back to the skillet and toss with the shrimp. Garnish with chopped cilantro and serve with lime wedges and warm tortillas.

Notes

  • For extra flavor, add mushrooms, zucchini, or jalapeños.
  • You can substitute the shrimp with chicken, steak, or fish.
