Skillet Chicken Fajitas are a quick, flavorful meal that combines tender chicken, sautéed bell peppers, onions, and homemade fajita seasoning, all wrapped in warm tortillas. Ready in just 25 minutes, this easy, customizable dish is perfect for a busy weeknight dinner.
Ingredients
1 lb boneless, skinless chicken breasts, cut into strips
2 tablespoons fajita seasoning (cumin, chili powder, paprika, garlic powder, oregano, salt, and pepper, or store-bought)
2 tablespoons olive oil
1 red onion, sliced
1 each red, green, and yellow bell pepper, sliced
2 tablespoons lime juice
8 soft tortillas (flour or corn)
Optional garnishes: Avocado, salsa, cheddar cheese, sour cream, cilantro

Season the chicken: In a Ziploc bag, combine chicken strips, oil, and fajita seasoning. Seal and shake to coat evenly. Marinate for at least 20 minutes (or overnight in the fridge).

Cook the chicken: Heat oil in a large skillet over medium-high heat. Add chicken and cook for 6-8 minutes, stirring often, until browned and cooked through. Remove and set aside.

Cook the vegetables: In the same skillet, add onions and bell peppers. Sauté for 3-5 minutes until soft.

Combine: Return the chicken to the skillet and add lime juice. Toss to combine and heat through.

Notes
For a vegan version, replace chicken with portobello mushrooms or tofu.
For extra heat, add fresh jalapeños, more chili powder, or cayenne pepper.
