Description

Indulge in the warm, gooey delight of Snickerdoodle Cobbler, a dessert that combines the cinnamon-sugar magic of snickerdoodle cookies with the cozy texture of a cobbler. This easy-to-make treat is perfect for any occasion, offering irresistible flavor, a quick prep time, and endless topping options.

Ingredients

  • 1/3 cup unsalted butter, melted
  • 3/4 cup whole milk
  • 2 tsp vanilla extract
  • 1 1/2 cups granulated sugar (divided)
  • 1 1/2 cups all-purpose flour
  • 2 1/4 tsp baking powder
  • 3/4 tsp salt
  • 2 tsp ground cinnamon (plus 1/2 tsp for topping)
  • 1 1/2 cups packed brown sugar
  • 1 1/2 cups hot water

Instructions

Preheat and Prepare:

  1. Preheat oven to 350°F (175°C).
  2. Pour melted butter into a 9×13-inch baking dish, ensuring it evenly coats the bottom.

Make the Batter:

  1. In a large bowl, whisk together milk, vanilla extract, and 1 1/2 cups granulated sugar until combined.
  2. Add flour, baking powder, salt, and 2 tsp cinnamon to the wet mixture. Whisk until just combined (lumps are okay).

Assemble the Cobbler:

  1. Pour batter over melted butter in the baking dish—do not stir.
  2. Evenly sprinkle the brown sugar over the batter.
  3. Gently pour the hot water over the entire mixture without stirring.

Bake and Finish:

  1. Bake for 30–35 minutes, or until the top is golden brown and the center is mostly set but slightly gooey.
  2. Mix 1/4 cup granulated sugar with 1/2 tsp cinnamon and sprinkle over the hot cobbler as soon as it’s out of the oven.

Serve:

  1. Let cool slightly before serving warm. Top with vanilla ice cream or whipped cream for an extra indulgent treat.

Notes

  • Customizable Sweetness: Reduce the granulated and brown sugar by 1/4 cup each for a less sweet cobbler.
  • Fruit Twist: Add fresh or canned apples, peaches, or pears for extra flavor.
  • Breakfast-Ready: This cobbler is versatile enough to be served for brunch or breakfast.
