Description

Ingredients

2 cups masa harina

1/2 tsp salt

1 cup warm water

1 can (15 oz) refried beans

1 lb ground beef or shredded chicken

1 cup shredded lettuce

1/2 cup diced tomatoes

1/2 cup crumbled queso fresco

Instructions

  • In a large bowl, combine the masa harina and salt. Gradually add the warm water, mixing until a dough forms. Knead the dough until smooth and pliable. Divide the dough into small balls.

  • Heat a griddle or large skillet over medium-high heat. Flatten each dough ball into a tortilla using your hands or a tortilla press. Cook each tortilla for 1-2 minutes on each side until golden brown.

  • Cook the ground beef or shredded chicken in a separate pan over medium heat until fully cooked. Drain any excess fat and set aside.

  • Heat the refried beans in a small pot over low heat, stirring occasionally.

  • To assemble the tacos, spread refried beans on each tortilla, top with cooked beef or chicken, shredded lettuce, diced tomatoes, crumbled queso fresco, and salsa.

Notes

Vegetarian Option: Use extra refried beans or sautéed vegetables in place of the meat for a vegetarian taco option.

Storage: Leftover tortillas can be stored for up to 2 days. Store meat and beans separately in the fridge for up to 3 days.
