Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tbsp baking powder
- ½ tsp salt
- ⅓ cup sugar
- ¾ cup milk
- 2 eggs
- ¼ cup melted butter
- 2 tbsp honey
Instructions
- Preheat oven to 375°F (190°C) and grease a mini muffin tin.
- In a bowl, whisk together cornmeal, flour, baking powder, salt, and sugar.
- In another bowl, beat eggs, then mix in milk, melted butter, and honey.
- Combine wet and dry ingredients, stirring until just mixed.
- Fill muffin tins about ¾ full with batter.
- Bake for 15–20 minutes or until golden and a toothpick inserted comes out clean.
- Drizzle with honey while warm and serve.
