Description

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ⅓ cup sugar
  • ¾ cup milk
  • 2 eggs
  • ¼ cup melted butter
  • 2 tbsp honey

Instructions

  • Preheat oven to 375°F (190°C) and grease a mini muffin tin.
  • In a bowl, whisk together cornmeal, flour, baking powder, salt, and sugar.
  • In another bowl, beat eggs, then mix in milk, melted butter, and honey.
  • Combine wet and dry ingredients, stirring until just mixed.
  • Fill muffin tins about ¾ full with batter.
  • Bake for 15–20 minutes or until golden and a toothpick inserted comes out clean.
  • Drizzle with honey while warm and serve.
