Description

Ingredients

1 tablespoon olive oil

½ teaspoon table salt (use ¼ teaspoon if you’re sensitive to salt)

½ teaspoon chipotle powder (swap with chili powder for a milder taste)

½ teaspoon chili powder

½ teaspoon smoked paprika

½ teaspoon cumin

½ teaspoon garlic powder

1 to 1 ¼ pounds chicken tenderloins (or chicken breast cut into 3 long vertical strips)

½ lime (optional)


Instructions

  • Preheat the oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

  • Prepare the seasoning: In a small bowl, mix together the salt, chipotle powder, chili powder, smoked paprika, cumin, and garlic powder.

  • Coat the chicken: Pat the chicken tenderloins dry with a paper towel to remove excess moisture. Drizzle olive oil over the chicken and toss to coat evenly. Sprinkle the seasoning mixture over the chicken and rub it in, making sure each piece is well-coated.

  • Bake the chicken: Place the seasoned chicken tenderloins on the prepared baking sheet in a single layer. Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is no longer pink in the center.
