Description

Spicy Chili Butter Avocado Toast with Eggs is a flavorful and nutritious breakfast that combines creamy avocado, soft or hard-boiled eggs, and a zesty chili-infused butter atop crispy toast. This easy-to-make dish is packed with healthy fats, protein, and bold flavors, making it a perfect start to your day.

Ingredients

For the Chili Butter:

  • 1 tbsp olive oil
  • 2 tbsp salted butter
  • 2 cloves garlic, minced
  • 1 tsp chili flakes (adjust to taste)
  • ½ tsp paprika

For the Toast:

  • 2 large eggs
  • 2 slices sourdough or whole grain bread
  • 1 ripe avocado
  • Salt and freshly ground black pepper, to taste
  • Fresh herbs (parsley or cilantro), chopped, for garnish

Instructions

1. Prepare the Chili Butter:

  • In a small saucepan over low heat, combine olive oil and butter.
  • Once the butter has melted, add minced garlic, chili flakes, and paprika.
  • Stir frequently and cook until the garlic is fragrant and the butter turns lightly golden. Avoid burning the garlic.
  • Remove from heat and set aside.

2. Cook the Eggs:

  • Bring a pot of water to a gentle boil.
  • Carefully add the eggs and cook to desired doneness:
    • Soft-boiled eggs (runny yolks): 6 minutes
    • Hard-boiled eggs (firm yolks): 10 minutes
  • Transfer eggs to an ice bath, then peel once cooled.

3. Prepare the Toast & Avocado:

  • Toast the bread slices until golden brown.
  • Mash the avocado in a bowl, seasoning with salt and pepper.

4. Assemble the Toast:

  • Spread mashed avocado evenly over each slice of toasted bread.
  • Slice the eggs and place them on top of the avocado.
  • Drizzle generously with the prepared chili butter.
  • Garnish with fresh herbs for extra flavor.

5. Serve Immediately:

  • Enjoy warm for the best taste and texture.

Notes

  • Adjust Spice Level: Reduce chili flakes for a milder taste or swap with smoked paprika.
  • Make-Ahead Tip: Store chili butter in the fridge for up to 3 days. Reheat gently before use.
  • Bread Choices: Sourdough and whole grain are best, but gluten-free options work too.
