Description

Spicy Sriracha Salmon Bowls are a delicious fusion of bold flavors, combining tender salmon fillets with a spicy sriracha glaze, creamy mayo sauce, and vibrant vegetables. Perfect for a healthy lunch, dinner, or meal prep, these bowls are quick and easy to prepare, especially with the help of an air fryer. Packed with fresh ingredients like mango, cucumber, and shredded carrots, this dish is satisfying and full of flavor.


Ingredients

2 salmon fillets

Olive oil or cooking spray for air fryer basket

3½ tbsp sriracha, divided

2 tbsp brown sugar

½ tsp salt

2 cups cooked rice

1 jalapeño, sliced

1 cucumber, sliced

1 cup shredded carrots

1 mango, chopped

½ cup mayonnaise

1 tsp minced garlic

½ tbsp sesame seeds, for garnish

Green onion, for garnish


Instructions

  1. Pat the salmon fillets dry and season with salt.

  2. In a small bowl, mix 2½ tbsp sriracha, brown sugar, and a pinch of salt. Brush the salmon fillets with the mixture, reserving the remaining glaze.

  3. Preheat air fryer to 400°F (200°C) and coat the basket with olive oil or cooking spray. Air fry the salmon for 8-10 minutes, until cooked through.

  4. In a small bowl, mix mayonnaise, garlic, and remaining sriracha.

  5. Assemble bowls by dividing cooked rice between two bowls. Top with salmon fillets, sliced jalapeño, cucumber, shredded carrots, and chopped mango.

  6. Drizzle sriracha mayo over the salmon and veggies. Garnish with sesame seeds and green onion. Serve and enjoy!

Notes

For a vegetarian version, swap salmon with crispy tofu or tempeh.

Add extra sriracha or chopped fresh chili for more heat.

Feel free to swap vegetables like avocado or radishes to fit your preferences.

Use brown rice, quinoa, or cauliflower rice as alternative bases.
