Ingredients

4 boneless, skinless chicken breasts

1 cup fresh spinach leaves, chopped

1/2 cup feta cheese, crumbled

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon dried oregano


Instructions

  1. Prepare the Chicken:
    Preheat your oven to 375°F (190°C). Carefully slice a pocket horizontally into each chicken breast, making sure not to cut all the way through. Season both sides of the chicken with salt, pepper, and dried oregano.

  2. Make the Filling:
    In a small bowl, combine the chopped spinach, crumbled feta cheese, and minced garlic. Stir until well combined.

  3. Stuff the Chicken:
    Carefully stuff each chicken breast with the spinach and feta mixture, evenly dividing the filling. Secure the open edge with toothpicks if necessary.

Notes

Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.

Freezing: Freeze the stuffed chicken breasts before cooking by wrapping them tightly in plastic wrap and foil. Freeze for up to 3 months. Thaw overnight and bake as instructed.
